Stack of Vegan Banana Pancakes with Organic Maple Syrup

This recipe is simple, kid approved, gluten-free, dairy-free and delicous.


With this batch, we were able to make 10 small pancakes.



Drizzle Drizzle


Ingredients :

2 ripe bananas

1/4 ground flax seeds soaked in 3/4 cup water for anywhere from 15 minutes to one hour

1/4 cup coconut oil (plus a little more for cooking)

1/2 cup oat mylk or another non-dairy milk of choice

1.5 cups oat flour (should be gluten-free

1 teaspoon baking soda

1 teaspoon cinnamon

.5 teaspoon salt (we used Redmond Real Salt)


Toppings of your choice!


Directions:


  1. First, mash the bananas. Next add add the flaxseed mixture, coconut oil and oat milk. Mix all these ingredients together


  1. Put all the dry ingreients in a bowl and mix together.


  1. Add the wet ingredients to the dry ingredients and mix until there is no more dry ingredients. It should be a wet mixture.


  1. On the stovetop, heat a skillet or pan over medium heat. Lightly coat with coconut oil.


  1. Use about 1/4 of the mix for each pancake. Cook until lightly brown on each side. Depending each pancake took about 4-6 minutes and can make more than one at a time, based on size.


  1. Top with maple syrups, berries, coconut whip cream or topping of choice!
