My Papaya Seed Dressing Recipe:
Serves: About 4-6
Ingredients:
1 cup fresh papaya, cut into cubes
3 tablespoons papaya seeds and pulp
4 tablespoons white balsamic vinegar
1 tablespoon agave nectar
1 teaspoon Dijon mustard
1/4 teaspoon freshly grated ginger
1/4 teaspoon salt
Freshly ground black pepper, to taste
1/3 cup olive oil
Instructions:
In a blender, combine the papaya cubes, papaya seeds and pulp, balsamic vinegar, agave nectar, Dijon mustard, ginger, salt, and pepper.
Blend until smooth and well combined.
With the blender running, slowly drizzle in the olive oil until the dressing is emulsified and creamy.
Taste and adjust seasoning if needed.
